Try this Dakos Greek Cheesecake recipe for a unique cheesecake that will pleasantly surprise you and your guests.
Ingredients
for the base;
- DAKOS RUSK (kritharokoulouro) 60gr/ 2,1oz
- ORDINARY RUSKS (with no sugar) 30gr/ 1,05oz
- SALTY BISCUITS 50gr/ 1,76oz
- OLIVE OIL 2tbs
- BUTTER 1tbs
- ALMONDS 40gr/ 1,4oz
for the filling;
- FETA GREEK CHEESE 250gr/ 8,8oz
- ANTHOTYROS (myzithra) 450gr/ 15,8oz
- CREAM CHEESE WITH HERBS 200gr/ 7oz
- EGG 1
- DILL 2tbs
- SALT
- PEPPER
for the topping;
- CHERRY TOMATOES 300g/ 10,58oz
- ROASTED SWEET PEPPERS 2-3
- GHERKINS 6
- OLIVES
- CAPERS
- OLIVE OIL 1,4cup
- SALT
- PEPPER
- OREGANO
Method
1. Preheat oven to 180o C / 350o F.
2. Put in the blender the rusks, biscuits and almonds until being grated.
3. Place in a spring form pan and add butter and olive oil and mix
4. Bake the crust for 15 minutes.
5. In the mixer add the three cheeses and egg and whisk until creamy.
6. Mix in the remaining ingredients.
7. When the crust has cooled add the cheese mix and spread
8. Bake for 15 minutes
9. Cut in half and marinate the tomatoes
10. Decorate with cherry tomatoes, sweet peppers, olives, capers and thin slices of gherkins and season with salt, pepper and oregano
11. Serve with extra virgin olive oil on top and enjoy!
