Its funny where a taste or smell can transport you. Thirty-five years ago waiting for the “big lunch” bell filled my heart with dread. Trying to find a quiet corner to open my brown square school bag to discover what concoction my Greek mother had managed to squeeze between two pieces of unsuspecting white slice bread.
Time travel to 2012 and you give your order over the counter at the local deli loud and proud for the same sandwich. Many great Aussie Chefs have taken us on the journey over the years, holding our hands as we try all the flavors and taste every different culture brought to our shores and calling Australia “home.”
George Calombaris is one of these Chefs. He should be our National Icon and Celebrated once a year. He feels familiar as we watch him on Master Chef and we love his rough and ready persona. George is the proud owner of seven restaurants in Melbourne and also spread his wings, operating a restaurant in Mykonos. When in Melbourne, his restaurants have become part of a visitors to do list. Whether you’re eating at the enchanting Press Club or relaxing over at The Hellenic Republic, George has the Melbourne taste buds covered.
