Kalitsounia is an amazing cheese-filled sweet pastry traditionally made on the Greek island of Crete. Here’s our authentic recipe:
For the filling:
• SWEET MIZITHRA OR ANTHOTIROS 3oz, 900gr
• 3 EGGS
• ¼ tsp VANILA
• SUGAR 7oz, 200gr
• ½ tsp CINNAMON
MIX FOR 5 MINUTES
For the dough:
• BUTTER 6oz, 170gr
• SUGAR 7oz, 200gr
MIX FOR 8 MINUTES
• STRAINED YOGURT 7oz, 200gr
MIX FOR 5 MINUTES
• 1 EGG YOLK
• 1/8 tbs VANILA
• ½ tbs BAKING SODA
• ½ tbs BAKING POWDER
• LEMON ZEST OF HALF LEMON
• LEMON JUICE OF HALF LEMON
MIX FOR 3 MINUTES
• ALL PURPOSE FLOUR 2,2oz, 1kg
MIX FOR 8 MINUTES
Le the dough stand for 30 minuts
Open dough into sheets, fill with the cheese-filling and shape into stars (watch video below for method).
BAKE AT PREHEATED OVEN 180 CELCIOUS FOR 20 – 30 MINUTES
SERVE WITH CINNAMON
