Ingredients;
- EGGPLANTS 4
- ONIONS 2
- GARLIC ½ clove
- TOMATO PASTE ½ tbs
- CHOPPED TOMATOES 200gr/ 7oz
- PARSLEY ½ cup
- FETA GREEK CHEESE 200gr/ 7oz
- OLIVE OIL 25gr/ 0.88oz
- SUGAR ½ tsp
- SALT
- PEPPER
Method;
- Preheat oven to 180 C/ 356 F
2. Cut the the stems of the eggplants, share in half and carve
3. Put the eggplants on a baking pan and add some salt on top
4.Bake for 40-45 minutes
5. Cut the onions in thin slices
6. In low fire put 3tbs of olive oil in a frying pan and fry the onions along with the sugar for 10-15 minutes
7. Add chopped garlic and tomato paste and cook for 1-2 minutes
8. Add chopped tomatoes salt and pepper and cook for 2-3 minutes
9. When out of fire add chopped parsley
10. Fill up the eggplants and add feta cheese on top
11. Put in the oven for 10-15 minutes
