Kourabiedes are some of the most famous Greek Christmas cookies. They are a kind of shortbread cookie, perfectly sweet and satisfying, filled with almonds and topped with powdered sugar.
Depending on the region, Greek kourabiedes can also have a splash of brandy or rosewater inside to add some extra flavor.
The word kourabiedes comes from the Turkish word kurabiye, which itself was borrowed from the Arabic qurabiya, all of which refer to this type of biscuit. Cookies like kourabiedes are made across the Balkans and the Middle East.
Recipe for Kourabiedes
In a mixer cream together 600 grams of butter with 100 grams of powdered sugar for three minutes.
Add 15 grams of baking soda and 10 grams of vanilla into a 25- ml cup of raki or vodka; stir to combine and place in the mixer.
Then slowly add 1 kg of pastry flour and mix for five minutes.
Add 100 grams of crushed baked almonds into the mixture and mix for one minute.
Take the dough from the mixer and place in a bowl. Shape the kourabiedes cookies into small spheres and place them on a baking sheet.
Bake at 200C (392 F) in preheated oven for 30 minutes.
Then place the cookies in a bowl and cover in 1 kg of powdered sugar. Carefully coat the cookies with the sugar and place them on a platter.
You can store kourabiedes in a sealed container at room temperature for one whole month.
