For the dough
In a mixer add 350 ml water, 350ml olive oil, 50gr butter, 50ml honey και 50ml raki – mix for one minute.
In a cup of orange juice (125ml), add 15gr baking soda, stir and place in the mixer.
Mix for one minute. Then add in the mixer the zest of an orange, cinammon (50gr), powder sugar (125 gr) and semolina flour (400gr). Slowly add pastry flour (900gr) and mix for 5 minutes.
Take the dough from the mixer and place in a bowl. Shape the cookies and place in a pan.
Bake at 200C in preheated oven for 30 minutes.
Make the Syrop
Add in a pot: water (1 lt), sugar (1.8 kg), honey (500gr).
Boil for 3 minutes and wait until cool.
Soak the baked cookies in the syrop for 3 minutes.
Place on a platter and add ground walnuts.
Melomakarona can be stored and preserved at room temperature for up to a month.
