Greek gardoumbes, or gardoumbakia, are pieces of lamb organ meat wrapped in lamb intestines. It is a traditional Greek delicacy usually served on Easter. Here’s the recipe:
Ingredients;
for the gardoumbakia;
• LAMB INTESTINES (1 lb – 454 gr)
• LAMB LIVERS AND LUNGS (2 lb – 900 gr)
• OREGANO 1 tsp
• SALT 2 tsp
• PEPPER 1 tsp
• OLIVE OIL 1/4 cup
• LEMON JUICE 1/4 cup
• MUSTARD 2 tbsp
for the yogurt sauce;
• YOGURT 6 tbsp
• CHOPPED DILL 1/2 CUP
• CHOPPED SCALLIONS 1 CUP
• LIME ZEST
• OLIVE OIL 2 tbsp
• MUSTARD 1 tbsp
• HONEY 1 tbsp
• SALT 1/2 tsp
• PEPPER 1/2 tsp
Method;
for the gardoumbakia;
1. Clean the lamb intestines properly
2. Put them in a bowl and add water and lemon juice
3. Cut the lamb livers and lungs in small pieces
4. Put them in a bowl add oregano, salt and pepper
5. Skewer the livers and lungs
6. Then wrap the sewers with the intestines
7. Mix the lemon juice, mustard, water and olive oil
8. In a baking pan place the gardoumbakia along with the mixture
9. In a preheated oven bake for 90 minutes in 200 C/ 392 F
10.For the yogurt sauce, mix all ingredients in a bowl and serve
